Felix Krause, Google engineer, has made public how any app that has permission to access the camera of an iPhone, both front and back, can use it at any time, without you noticing.

Even, it is possible to activate the real-time face detection system, going unnoticed by the phone's user.

The flaw lies in a design problem in the permissions management of iOS, the iPhone operating system, therefore, for now, the only feasible solution to avoid “being spied on” is to put the typical tape covering the camera, as is usually done on laptops.
